This is the type of demonstration I would normally do using Apple Remote Desktop. This method is so much better because the students can view it and replay it side-by-side with their own work which should make the process for creating their first Excel chart much easier!

Great example of how useful this can be in explaining things that are on a computer screen. Being able to pause the video, and being able to "do" what is being demonstrated, is a real plus!
